Sardine Spaghetti with Lemon and Chilli Recipe

Imagine the rich, briny taste of sardines dancing with the zesty tang of lemon and a fiery kick of chilli. It’s a symphony of flavours that will leave your taste buds begging for more. This simple yet sensational dish is perfect for a midweek dinner that’s sure to impress.

Ingredients:

  • 300g spaghetti
  • 2 tbsp olive oil
  • 2 cloves garlic, thinly sliced
  • 1 small red chilli, deseeded and finely chopped
  • 2 x 120g cans of sardines, drained
  • Zest and juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • Parmesan cheese, to serve (optional)

Instructions:

    Cook the spaghetti in salted boiling water according to package instructions. In the meantime, heat olive oil in a pan and sauté the garlic and chilli until fragrant. Add the sardines, breaking them apart with a spoon, and cook for a few minutes until heated through.

    Drain the spaghetti, reserving some pasta water. Toss the cooked pasta into the sardine mixture, along with the lemon zest, juice, and parsley. Add reserved pasta water if needed for extra moisture.
