Tender monkfish takes centre stage, beautifully seared for a touch of texture. It's then bathed in a rustic tomato and herb sauce, a rich combination of juicy tomatoes, fragrant garlic, and fresh herbs. This hearty dish is packed with flavour, perfect for a satisfying and impressive meal.

Ingredients:

  • 4 Monkfish fillets (150g each)
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • Fresh herbs (parsley, basil, thyme)
  • 1 Onion, chopped
  • 4 Tomatoes, chopped
  • 100 ml White wine

Instructions:

  1. Marinate the Monkfish

    Coat 4 monkfish fillets (150g each) in a mixture of 2 tablespoons olive oil, 2 cloves minced garlic, and a selection of herbs. Let marinate for 30 minutes.

  2. Prepare the Tomato Sauce

    In a skillet, sauté 1 chopped onion and 2 cloves of garlic until golden, then add 4 chopped tomatoes, a splash of 100ml white wine, and herbs. Simmer for 20 minutes until thickened.

    In a separate pan, sear the marinated monkfish on high heat for 4 minutes each side, until golden and cooked through.
