Yellowfin Bream with Vietnamese Salad Recipe

Ingredients:
- 4 yellowfin bream fillets
- Salt and pepper to taste
- Olive oil for brushing
- 2 cups shredded cabbage
- 1 carrot, julienned
- 1 cucumber, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh coriander leaves
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 red chilli, finely chopped
- Crushed peanuts for garnish
- Lime wedges for serving

1 Prepare Fish
Preheat grill to medium-high heat. Season yellowfin bream fillets with salt and pepper, and brush with oil. Grill the fish for about 3-4 minutes on each side until cooked through and slightly charred.

In a large bowl, combine shredded cabbage, carrot, cucumber, fresh mint, and coriander. In a separate bowl, whisk together lime juice, fish sauce, sugar, and finely chopped chilli to create the dressing. Toss the salad with the dressing until evenly coated.
