Ingredients:
4 barramundi fillets (about 200g each)
Salt and pepper, to taste
2 tbsp olive oil
2 ripe mangos, pureed
Juice of 1 lemon
1 tsp sugar
Fresh coriander, for garnish
Instructions:
1 Prepare Mango Sauce
Blend ripe mango, lemon juice, and a hint of sugar until smooth, then simmer for about 10 minutes until the sauce thickens slightly.
2 Cook Barramundi
Season barramundi fillets with salt and pepper. In a skillet, heat olive oil and pan-fry the fillets for 3-4 minutes on each side until golden and flaky.
