Barramundi with Zesty Tomato-Caper Relish Recipe

Ingredients:
- 4 barramundi fillets
- 500g potatoes, peeled
- 50g butter
- 100ml milk
- 2 tomatoes, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp capers
- Salt and pepper
- Fresh herbs, for garnish
Instructions:

1 Prepare Potato Mash
Boil potatoes until tender, mash with butter and milk, season with salt and pepper.

2 Cook Barramundi
Season barramundi fillets with salt and pepper, pan-fry until golden and cooked through.

3 Make Tomato-Caper Sauce
Sauté onions and garlic, add chopped tomatoes and capers, simmer until the sauce thickens.
