500g cod fillets
Salt and pepper
1/2 cup plain flour
2 eggs, beaten
1 1/4 cups panko breadcrumbs
Olive oil spray
Instructions:
1 Prepare the Cod
Cut cod fillets into finger-sized pieces and season lightly with salt. This preparation should take about 5 minutes.
2 Coat the Cod
Dip each piece first in flour, then beaten eggs, and finally coat thoroughly with panko breadcrumbs. Spend about 5 minutes on this step to ensure even coating.
3 Bake
Arrange on a greased baking sheet and bake at 220°C until golden and crispy, which will take about 12-15 minutes.
