This Golden Silver Fish Omelette is a quick and easy dish that delivers crispy, golden edges with a fluffy interior. Infused with the savory umami of silverfish, this dish is a fantastic side to rice or congee and pairs perfectly with a touch of chili sauce or soy dressing.

Ingredients:

  • 100g frozen silverfish, thawed and draine
  • 4 large eggs
  • 1 tablespoon light soy sauce
  • ½ teaspoon white pepper
  • 1 tablespoon cornstarch (for extra crispiness)
  • 1 spring onion, chopped
  • 1 small red chili, sliced (optional)
  • 2 tablespoons vegetable oil
