Sweet Chili-Glazed Tuna Skewers
A vibrant dish featuring tender cubes of tuna marinated in a tangy sweet chilli glaze, balanced with zesty lime, aromatic garlic and ginger, then grilled to a delicate char. The dish is finished with a sprinkle of fresh coriander, offering a burst of flavour in every bite.
Ingredients:
- 300 g Tuna steak, cubed
- 50 ml Sweet chilli sauce
- 1 piece Red chilli pepper, deseeded and finely chopped
- 2 cloves Garlic cloves, minced
- 1 tablespoon Fresh ginger, grated
- 1 lime Lime juice
- 1 tablespoon Extra virgin olive oil
- 15 g Fresh coriander, roughly chopped
- to taste Salt
- to taste Black pepper
Instructions:

1 Prepare the Marinade
- In a large bowl, combine the sweet chilli sauce, fresh lime juice, olive oil, minced garlic, grated ginger and chopped red chilli. Season lightly with salt and black pepper.

2 Marinate the Tuna
- Gently fold in the tuna cubes ensuring they are evenly coated by the marinade. Allow the tuna to rest in the mixture for about 15 minutes to absorb the flavours.

3 Assemble the Skewers
- Thread the marinated tuna cubes onto skewers, taking care not to overcrowd. This helps ensure even cooking throughout.

4 Preheat the Grill
- Heat your grill or barbecue until it reaches a medium-high temperature, preparing it for searing the skewers.

5 Grill the Skewers
- Place the skewers on the hot grill and cook them for approximately 2 minutes on each side, or until they develop a light char and the tuna remains just cooked through.

- Transfer the skewers to a serving plate and sprinkle with the chopped fresh coriander. Serve immediately for the best texture and flavour.
