Mediterranean Baked Flounder with Aromatic Vegetables Recipe
This recipe is a light and flavourful Mediterranean escape. Tender flounder is baked to perfection alongside vibrant vegetables, all infused with a heady mix of garlic, lemon, and Parmesan cheese. Every bite is a burst of sunshine, perfect for a nourishing weeknight dinner.
Ingredients:
- 560g flounder fillet
- 2 medium zucchinis, sliced
- 1 small red onion, sliced
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp cumin
- Juice of 2 lemons
- 60ml extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
Instructions:

1 Prep Vegetables and Fish
Season flounder fillets and a mix of zucchini and red onion with salt and pepper. Arrange in a baking dish.

Combine minced garlic, oregano, paprika, cumin, and lemon juice with olive oil, and drizzle over the fish and vegetables.

Bake in a preheated oven at 180°C (350°F) for about 15 minutes, until the fish is flaky. Sprinkle with Parmesan and bake for an additional 5 minutes until the cheese is melted and golden.
