Pan-Seared Turbot with Brown Butter and Capers is a delicate and flavourful dish, where the mild, tender turbot fillet is enhanced by the richness of nutty brown butter and the tang of capers. Ingredients:

  • 4 turbot fillets (about 600g total)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 100g unsalted butter
  • 2 tbsp capers, drained
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
