This Longevity Noodle dish, bursting with flavour, is the perfect celebratory feast. Featuring juicy prawns, fragrant ginger soy sauce, and a medley of colourful vegetables, these silky noodles symbolise a long and prosperous life. Get ready to savour good fortune with every bite!

Ingredients:

  • 300 g longevity noodles or thin egg noodles
  • 2 tbsp vegetable oil
  • 300 g prawns, peeled and deveined
  • 3 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 medium carrot, julienned
  • 1 cup snow peas, trimmed
  • 2 spring onions, sliced
  • 1 tsp sesame seeds
  • Fresh coriander leaves

Instructions:

    Peel and devein the prawns, leaving the tails intact. Cook the longevity noodles in boiling water according to package instructions. Drain and rinse under cold water to stop the cooking process. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, sugar, and grated ginger.

    Heat vegetable oil in a wok or large pan over medium-high heat. Sauté the prawns for 2–3 minutes until pink and cooked through. Remove and set aside. In the same wok, add garlic and sliced mushrooms, stir-frying until fragrant. Toss in the julienned carrots, snow peas, and spring onions. Cook for 2–3 minutes until tender-crisp.

  3. Combine and Serve

    Return the prawns to the wok along with the noodles. Pour in the sauce and toss to coat evenly. Stir-fry for 1–2 minutes to combine the flavours. Garnish with sesame seeds and fresh coriander before serving hot.
