Ingredients:
- 1 whole ocean perch (about 1.5kg), cleaned and scaled
- 3 tbsp olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 lemon, sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- Salt and pepper, to taste
- Fresh herbs, for garnish
- Lemon wedges, for serving

1 Prepare the Perch
Preheat your oven to 200°C (400°F). Rinse the ocean perch under cold water and pat dry with paper towels. Score the fish on both sides with shallow diagonal cuts, about 2-3 cm apart.

2 Season the Fish
In a bowl, combine the olive oil, minced garlic, lemon zest, and juice, chopped fresh herbs, salt, and pepper. Rub this mixture all over the fish, making sure to get some into the scored cuts and the cavity.

Place the seasoned perch on a baking tray lined with parchment paper. Stuff the cavity with lemon slices and additional herbs. Roast in the preheated oven for 25-30 minutes, or until the fish is cooked through and the flesh flakes easily with a fork.
