Smoked Eel Club Sandwiches with Wasabi Cress Recipe
Experience a gourmet twist on the classic club sandwich with these Smoked Eel Club Sandwiches. The rich, smoky flavour of the eel pairs perfectly with the zesty bite of wasabi cress, creating a unique and delectable sandwich that’s perfect for lunch or a light dinner.
Ingredients:
- 200g smoked eel fillets, thinly sliced
- 12 slices wholegrain bread
- 3 tablespoons mayonnaise
- 1 teaspoon wasabi paste
- Juice of 1/2 lemon
- 1 cucumber, thinly sliced
- Fresh cress
- Salt and pepper, to taste
Instructions:

1 Prepare the Eel and Dressing
In a small bowl, mix together 3 tablespoons mayonnaise, 1 teaspoon wasabi paste, and the juice of half a lemon. Season with salt and pepper to taste. Set aside. Thinly slice 200g smoked eel fillets.

2 Assemble the Sandwiches
Lightly toast 12 slices of wholegrain bread. Spread the wasabi mayo on one side of each slice. Layer the smoked eel, thinly sliced cucumber, and fresh cress on 6 slices of bread. Top with the remaining 6 slices, mayo side down.

Arrange the sandwich quarters on a serving platter. Garnish with extra cress and serve immediately.
