Craving a quick, healthy, and flavourful dinner? This broiled snapper with a zesty ginger-garlic marinade is the perfect choice. The fish is cooked to perfection, with a crispy exterior and a tender, flaky interior. The marinade adds a burst of flavour, while the simplicity of the broiling method ensures a healthy and delicious meal. Serve with your favourite sides, such as steamed rice or a fresh salad.

Ingredients:

  • 4 snapper fillets (about 600g total)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp ginger, grated
  • 2 cloves garlic, minced
  • 1 tsp honey
  • Juice of 1 lime
  • 1/2 tsp chilli flakes
  • Fresh coriander, for garnish
  • Lime wedges, for serving

Instructions:

    In a small bowl, mix soy sauce, sesame oil, grated ginger, minced garlic, honey, lime juice, and chilli flakes. Stir to combine.

    Place the snapper fillets on a lined baking tray. Brush both sides generously with the marinade, ensuring they’re evenly coated. Let the fish marinate for 10–15 minutes for the flavours to infuse.

    Preheat the grill (broiler) on high. Broil the fillets for 6–8 minutes or until the tops are golden and the fish flakes easily with a fork. Serve with lime wedges and garnish with fresh coriander.
