Barramundi and Tomato Noodles Recipe
This delightful dish features tender barramundi fillets nestled in a vibrant, tomato-based sauce, served over your choice of noodles. The combination of fresh tomatoes, garlic, and herbs creates a comforting yet refreshing meal, perfect for any night of the week.
Ingredients:
- 4 barramundi fillets (about 150g each)
- 2 cups cherry tomatoes, halved
- 2 cups vegetable stock
- 3 garlic cloves, minced
- 200g noodles (rice noodles or your choice)
- Fresh basil or parsley, for garnish
- Juice of 1 lime
- Salt and pepper, to taste
- Oil for cooking

In a large saucepan, heat a drizzle of oil over medium heat. Add minced garlic and sauté until fragrant. Stir in diced tomatoes, vegetable stock, and a pinch of salt and pepper. Bring to a simmer and cook for 10 minutes until the tomatoes break down.

Season the barramundi fillets with salt and pepper. Place them into the simmering tomato sauce and poach for 6-8 minutes, or until the fish is cooked through and flakes easily.
