Barramundi in Spiced Tomato-Coconut Sauce Recipe

Ingredients:
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp smoked paprika
- 400g canned diced tomatoes
- 1 cup fish or vegetable stock
- 1 cup coconut milk
- 4 barramundi fillets
- Salt and black pepper, to taste
- Fresh coriander, for garnish
- Steamed rice or flatbread, to serve

1 Sauté the Aromatics
Heat oil in a large pan over medium heat. Add onion, garlic, and ginger, cooking until soft. Stir in the spices and cook until fragrant.
