Tender basa fillets are marinated in a blend of traditional Indian spices, infusing them with rich aromas and a touch of heat. Skewered and cooked to perfection, these skewers offer a delightful twist on seafood, sure to tantalise your taste buds and impress with their visual appeal.

Ingredients:

  • Basa fillets, 8 pieces
  • Thick plain yogurt, 1 cup
  • Olive oil, 4 tbsp
  • Onion, 1 medium (made into paste)
  • Ginger paste, 1 tbsp
  • Garlic paste, 1 tbsp
  • Lemon juice, 4 tbsp
  • Turmeric powder, 1/2 tsp
  • Coriander powder, 1 tsp
  • Cumin powder, 1 tsp (extra for sprinkling)
  • Cinnamon powder, 1/4 tsp
  • Nutmeg powder, 1/4 tsp
  • Dry mango powder, 1 tbsp (optional)
  • Red chilli powder, to taste
  • Salt, 2 tsp

Instructions:

  1. Prepare the Marinade

    In a mixing bowl, combine 1 cup of thick plain yogurt, 4 tbsp of olive oil, pastes of 1 medium onion, 1 tbsp ginger, and 1 tbsp garlic. Stir in 4 tbsp lemon juice, 1/2 tsp turmeric, 1 tsp each of coriander and cumin powder, 1/4 tsp each of cinnamon and nutmeg powder, 1 tbsp dry mango powder (optional), red chilli powder to taste, and 2 tsp salt.

  2. Marinate the Fish
    2 Marinate the Fish

    Submerge 8 basa fillets in the marinade ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour.

  3. Cooking

    Preheat your oven to 180°C. Place the marinated basa on a greased foil-lined tray and bake for 15 minutes until the fish is cooked through. For a charred effect, broil for an additional 3-5 minutes.
