This vibrant ceviche features tender grouper marinated in zesty citrus juices, which "cook" the fish to perfection. Complemented by fresh herbs, a touch of chilli, and crisp vegetables, this dish is light, refreshing, and perfect for warm weather. It's an easy, no-cook recipe that pairs well with tortilla chips or can be served as a standalone appetiser.

Ingredients:

  • 500g fresh grouper, diced
  • ½ cup lime juice
  • ¼ cup lemon juice
  • ¼ cup orange juice
  • 1 small red onion, finely diced
  • 1 small tomato, diced
  • 1 jalapeño, finely chopped (optional)
  • ¼ cup fresh coriander, chopped (plus extra for garnish)
  • 1 avocado, sliced (for garnish)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions:

    Dice the fresh grouper into small, bite-sized pieces. Place the fish in a large bowl and cover with a mixture of lime juice, lemon juice, and orange juice. Add salt and stir gently to coat. Cover and refrigerate for 30 minutes to 1 hour, until the fish becomes opaque.
