These crispy tuna patties are an easy, delicious way to make the most of pantry staples. Featuring flaky tuna, fresh herbs, and a hint of lemon, they’re perfect for a quick lunch or light dinner. Serve with a crisp salad or in a sandwich for a satisfying meal.

Ingredients:

  • 2 cans tuna in spring water, drained
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for frying
  • Lemon wedges and parsley, for garnish
