Grilled Garfish with Tomato, Caper & Basil Salad Recipe

Ingredients:
- 4 garfish fillets
- 2 tbsp olive oil (for grilling)
- Salt and pepper, to taste
- 200g cherry tomatoes, halved
- 2 tbsp capers, drained
- 1 small red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 1 tbsp olive oil (for salad)
- 1 tbsp red wine vinegar
- Lemon wedges, for serving

Preheat the grill to medium-high. Drizzle the garfish fillets with olive oil, and season with salt and pepper. Grill the fillets for 2-3 minutes on each side, until just cooked through.
