Ingredients:
- 4 Moreton bay bugs
- 100 g butter
- 2 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1/4 cup basil
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 2 tbsp olive oil
- salt and pepper to taste
Instructions:

1 Prepare Citrus Herb Butter
Mix softened butter with minced garlic, chopped parsley, basil, lemon and lime zest and juice, salt, and pepper.

2 Marinate Bugs
- Clean the Moreton Bay bugs by splitting them in half lengthwise and removing the digestive tract.
- Place the bugs in a large dish and brush them on all sides with olive oil.
- Sprinkle with salt and pepper to ensure they are evenly seasoned.
- Let them marinate for about 10-15 minutes so the flavours meld.

- Preheat your grill to a medium heat.
- Thread the marinated Moreton Bay bugs onto skewers, shell side down.
