Lakerda is a traditional Mediterranean dish, where fish is salt-cured to highlight its delicate flavours. This Australian-inspired version features kingfish, cured in salt and served simply with olive oil and lemon, making it a refreshing appetiser or light snack.

Ingredients:

  • 500g kingfish fillets
  • 1 cup coarse sea salt
  • Olive oil, for serving
  • Fresh lemon wedges, for serving
  • Fresh parsley or dill, for garnish
  • Crusty bread, for serving

Instructions:

    Clean the kingfish fillets, removing the bloodline and bones, and slice into thick pieces. Generously coat the pieces in coarse sea salt and refrigerate for 24-48 hours.

  2. Rinse & Soak

    Rinse the salt from the kingfish and soak in cold water for 2-3 hours, changing the water hourly to reduce saltiness.

  3. Serve
