Sun-ripened tomatoes dance with nutrient-rich seaweed in a tantalising sesame soy dressing. This Japanese-inspired creation offers a perfect balance of taste and health, making it ideal for a light lunch or a refreshing side dish.
Ingredients:
- 50g dried seaweed
- 250g cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1 teaspoon grated ginger
- 1 tablespoon toasted sesame seeds
Instructions:

1 Prepare Seaweed
Soak the dried seaweed in cold water for 10 minutes until it rehydrates. Drain and squeeze out excess water, then cut into bite-sized pieces.

Whisk together soy sauce, rice vinegar, sesame oil, sugar, and grated ginger until the sugar dissolves.
