This Korean-inspired oyster dish is a refreshing and tangy appetiser or side, featuring fresh oysters mixed with a bold dressing of garlic, chilli, soy sauce, and sesame oil. It brings the essence of the ocean together with vibrant Korean flavours.

Ingredients:

  • 12 fresh oysters, cleaned
  • 2 garlic cloves, minced
  • 1 tbsp gochugaru (Korean chilli flakes)
  • 1 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 2 spring onions, finely chopped
  • Sesame seeds, for garnish

Instructions:

    In a bowl, mix garlic, gochugaru (Korean chilli flakes), spring onions, soy sauce, rice vinegar, sesame oil, and a pinch of sugar. Stir well to combine.
