Ingredients (10)

  • 400g Linguine
  • olive oil
  • 1 finely chopped brown onion
  • 3 crushed garlic cloves
  • 1 small red chilli
  • 400g blue swimmer crab meat
  • 250g cherry tomatoes, halved
  • 1 Zest and juice of lemon
  • ¼ cup chopped fresh flat-leaf parsley
  • salt and pepper (to taste)

Instructions

1. Cook the linguine in a large saucepan of boiling salted water following the packet instructions or until al dente. Drain well.

2. While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 5 minutes or until softened.

3. Add the garlic and chilli to the pan and cook, stirring, for 1 minute or until aromatic.

4. Increase the heat to high, add the crab meat and cook, stirring, for 2 minutes or until heated through.

5. Add the cherry tomatoes, lemon zest, and lemon juice to the pan. Cook, stirring, for 2 minutes or until the tomatoes start to soften.

6. Add the cooked linguine to the crab mixture in the pan. Toss to combine and heat through.

7. Stir through the parsley and season with salt and pepper to taste. Serve immediately.
