  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 fresh chillies, sliced
  • 300g prawns, peeled and deveined
  • 100g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 400ml coconut milk
  • 500ml vegetable or fish broth
  • 1 tbsp fish sauce
  • 1 lime, juiced
  • Fresh coriander, for garnish
  • Additional chilli slices, for garnish
