Grilled Octopus with Smoky Vegetable Medley Recipe
Enjoy a fusion of flavours with this smoky, grilled octopus paired with a medley of Southern-style vegetables. Tender octopus is seasoned and charred to perfection, then combined with spiced corn, capsicum, and zucchini for a hearty and flavourful dish. Perfect for a unique and satisfying meal.
Ingredients:
- 500g octopus, cleaned
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 ears corn, husked
- 1 red capsicum, quartered
- 1 zucchini, sliced
- 1 tbsp butter
- Juice of 1/2 lemon
- Fresh parsley, chopped, for garnish
Instructions:

1 Prepare and Marinate the Octopus
Rinse the octopus well and pat dry. In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Rub the mixture over the octopus to coat, then set aside to marinate for 15 minutes.

2 Grill the Octopus and Vegetables
Preheat a grill to medium-high heat. Add the octopus and grill for 4-5 minutes per side, until charred. Grill the corn, capsicum, and zucchini until tender and slightly charred. Remove everything from the grill and cut the octopus into bite-sized pieces.

3 Combine and Serve
In a large bowl, toss the grilled vegetables with butter, lemon juice, and fresh parsley. Add the octopus pieces, toss to combine, and season to taste. Serve hot and enjoy this smoky, vegetable-rich dish.
