Oven-Baked Snapper with Crisp Asian-Style Dressing Recipe
This oven-baked snapper is a flavour explosion! The tender, flaky fish is topped with a zingy Asian dressing that’ll make your taste buds dance. It’s the perfect healthy meal for a family dinner or a special night in. Pair it with steamed rice or stir-fried veggies for a complete culinary adventure.
Ingredients:
- 1 whole snapper (about 1.2kg), cleaned and scaled
- 2 tbsp olive oil
- Salt and pepper, to taste
- 3 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 2 garlic cloves, minced
- 1 red chilli, finely chopped
- 2 shallots, thinly sliced and fried until crispy
- Fresh coriander, for garnish
- Spring onions, thinly sliced, for garnish
- Steamed rice or salad, for serving

1 Prepare the Snapper
Preheat the oven to 200°C. Rinse the snapper and pat dry with paper towels. Score the skin on both sides and place the fish on a baking tray lined with baking paper. Drizzle with olive oil and season with salt and pepper. Bake for 25-30 minutes or until the snapper is cooked through and the skin is crispy.

2 Make the Asian Dressing
While the fish is baking, combine soy sauce, lime juice, sesame oil, ginger, garlic, and chopped chilli in a bowl. In a separate pan, heat a small amount of oil and fry the shallots until golden and crispy. Set aside.

Garnish with avocado slices and extra coriander. Serve the grouper ceviche with tortilla chips or over a bed of lettuce for a fresh and light meal.
