Pipis in XO Sauce with Crispy Noodles Recipe
This dish features tender pipis stir-fried in a rich and aromatic XO sauce, served on a bed of crispy noodles for the perfect textural contrast. The fusion of savoury seafood flavours with the crispy, golden noodles makes this an unforgettable dish that’s both satisfying and full of bold Asian-inspired flavours.
Ingredients:
- 1kg pipis, cleaned
- 200g egg noodles, cooked
- 2 tbsp vegetable oil (for frying)
- 2 tbsp XO sauce
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 red chilli, chopped
- 1/2 cup chicken stock
- 2 spring onions, sliced (for garnish)
Instructions:

1 Prepare the noodles
Fry the cooked noodles in hot oil until golden and crispy. Set aside on a serving platter.

2 Cook the pipis
In a hot wok, stir-fry garlic, ginger, and chillies until fragrant. Add pipis, XO sauce, and a splash of chicken stock. Cook until pipis open.

Spoon the pipis and XO sauce mixture over the crispy noodles. Garnish with spring onions and serve immediately.
