Pipis with Spicy Chorizo and White Wine Recipe

Ingredients:
- 1 kg fresh pipis
- 2 chorizo sausages, sliced
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup white wine
- 1 tsp chilli flakes
- 2 tbsp olive oil
- Fresh parsley, chopped
- Lemon wedges, for serving
- Crusty bread, for serving
Instructions:

1 Prepare the pipis
Rinse the pipis under cold water to remove any sand. In a large pan over medium heat, sauté the chorizo in olive oil until golden and slightly crisp. Add garlic and onion, cooking until softened.

2 Cook the pipis
Add the pipis to the pan, followed by the white wine and chilli flakes. Cover and cook until the pipis open, about 5 minutes. Stir occasionally to ensure even cooking.

Remove from heat and discard any unopened pipis. Toss in fresh parsley and squeeze over lemon juice. Serve immediately with crusty bread and a sprinkle of extra parsley.
