Rock Lobster Delight with Crisp Samphire and Citrus Butter Recipe


Uncover the luxurious taste of Rock Lobster Delight. Succulent Eastern rock lobster meets the crispness of samphire, all brought together with a vibrant yuzu-infused butter. This dish is a celebration of the ocean's bounty, where the subtle tang of yuzu and the fresh green of samphire enhance the lobster's natural sweetness.


  • 4 x 500g Eastern rock lobsters
  • 250g butter
  • 50mL yuzu juice
  • Zest of 1/4 lemon
  • 2 Tbsp chopped parsley
  • 2 Tbsp chopped chives
  • 1-2 punnets of samphire
  • Sumac for garnishing
  • Salt and pepper to taste


  1. Prepare the Yuzu Butter

    Combine softened butter with yuzu juice, lemon zest, parsley, chives, and finely chopped samphire. Season with salt and pepper and refrigerate until firm.

    Boil the lobsters briefly, then refresh in iced water. Halve the lobsters, remove the innards, and season.
