Snapper Curry Night Delight Recipe

Ingredients:
- 600g snapper fillets, cut into chunks
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 400g can diced tomatoes
- 400ml coconut milk
- Salt and pepper to taste
- Fresh coriander, chopped (for garnish)

1 Prep Ingredients
Cut snapper fillets into chunks. Finely chop onions, garlic, and ginger.

Heat oil in a large pot over medium heat. Add onions, garlic, and ginger, sautéing until golden brown. Add curry powder, cumin, and coriander, cooking for 2 minutes until fragrant.

Add snapper chunks, tomatoes, and coconut milk. Stir well, bring to a boil, then reduce heat and simmer for 20 minutes until the snapper is cooked through and the sauce thickens.

Season with salt and pepper, stir in fresh coriander, and serve hot with rice or naan.
