Spicy Tomato Garlic Mud Crab Recipe
The rich and succulent flavours of Spicy Tomato Garlic Mud Crab is an adaptation of the celebrated Singapore Chilli Crab. This dish combines the natural sweetness of mud crab with a spicy, aromatic tomato sauce, creating a harmonious balance of flavours that seafood lovers will adore.
Ingredients:
- 1 large mud crab (about 1 kg), cleaned and segmented
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 cup tomato sauce
- 2 tablespoons chilli paste
- 1 tablespoon soy sauce
- 2 eggs, beaten
- Spring onions and coriander for garnish
Instructions:

1 Prepare the Sauce
In a pan, heat olive oil and sauté minced garlic and ginger until fragrant. Stir in tomato sauce, chilli paste, and soy sauce, simmering until the sauce thickens.

2 Cook the Mud Crab
Add the cleaned and segmented mud crab to the sauce, ensuring it's well-coated, and cook until the shell turns bright red and the meat is tender, about 10 minutes.

Pour beaten eggs over the crab, gently stirring until the eggs set. Garnish with spring onions and fresh coriander.
