Spicy Steamed Barramundi with Fresh Aromatics Recipe
This steamed barramundi dish brings together the traditional flavours of Teochew cuisine, enhanced with a touch of spice for an invigorating kick. Fresh herbs, chilli, and garlic create a beautifully balanced, aromatic meal that pairs well with steamed rice.
Ingredients:
- 2 barramundi fillets
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp chilli oil
- 1-2 red chillies, sliced
- 2 cloves garlic, minced
- 5 cm ginger, julienned
- 2 spring onions, sliced
- Fresh coriander for garnish
- Salt, to taste
- A pinch of sugar
Instructions:

1 Prepare the Aromatics
In a small bowl, mix sliced ginger, garlic, red chilli, and spring onions. Reserve a portion of the red chilli for garnish. Rinse the barramundi fillets and pat dry.

2 Season and Steam the Fish
Season the barramundi with salt and place it on a heatproof plate that fits your steamer. Top with half of the ginger-garlic mixture and place in the steamer. Steam for 8-10 minutes, or until the fish is opaque and flaky.

3 Make the Spicy Sauce
In a small saucepan over medium heat, combine soy sauce, fish sauce, a dash of chilli oil, and a sprinkle of sugar. Heat until warm and pour over the steamed fish. Garnish with reserved red chilli and fresh coriander.
