Ingredients:

  • 2 whole crabs, cleaned and cut into sections
  • 3 tbsp vegetable oil
  • 1 large piece ginger, julienned
  • 4 shallots, sliced
  • 1/4 cup rice wine
  • 1/2 cup chicken stock
  • 2 tbsp light soy sauce
  • 1 tsp sugar
  • Fresh spring onions, chopped, for garnish
