Stir-Fried Pipis in Spicy Tomato Sauce Recipe

Fancy a flavour explosion? This vibrant and aromatic dish highlights the natural sweetness of pipis, perfectly balanced with a rich and spicy tomato sauce. Ideal as a shared appetiser or a main course served with crusty bread or steamed rice, it's a quick and flavour-packed way to enjoy fresh seafood with a touch of heat.

Ingredients:

  • 1 kg fresh pipis
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, finely grated
  • 2 red chillies, finely sliced (adjust to taste)
  • 4 ripe tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 2 tbsp fish sauce
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh coriander leaves, chopped
  • 2 tbsp fresh basil leaves, chopped

    Clean the pipis thoroughly under cold running water. Heat olive oil in a large wok or deep pan over medium heat. Sauté the garlic, ginger, and chillies until fragrant, about 2 minutes.

    Stir in the tomatoes, tomato paste, sugar, and fish sauce, and simmer for 5 minutes until the sauce thickens slightly. Add the pipis, cover the wok, and cook for 5–7 minutes, shaking the pan occasionally, until the pipis open. Discard any that remain closed.
