Stir-Fried Pipis in Spicy Tomato Sauce Recipe

Ingredients:
- 1 kg fresh pipis
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, finely grated
- 2 red chillies, finely sliced (adjust to taste)
- 4 ripe tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp sugar
- 2 tbsp fish sauce
- Salt and freshly ground black pepper, to taste
- 2 tbsp fresh coriander leaves, chopped
- 2 tbsp fresh basil leaves, chopped

1 Prepare the Ingredients
Clean the pipis thoroughly under cold running water. Heat olive oil in a large wok or deep pan over medium heat. Sauté the garlic, ginger, and chillies until fragrant, about 2 minutes.

2 Cook the Pipis
Stir in the tomatoes, tomato paste, sugar, and fish sauce, and simmer for 5 minutes until the sauce thickens slightly. Add the pipis, cover the wok, and cook for 5–7 minutes, shaking the pan occasionally, until the pipis open. Discard any that remain closed.

3 Finish and Serve
Stir in the fresh herbs, adjust seasoning with salt and pepper, and transfer the pipis and sauce to a serving dish. Garnish with extra herbs and serve immediately with crusty bread or steamed rice.
