A tantalising combination of briny pipis and savoury XO sauce, this dish brings together tender noodles and seafood in a rich, umami-filled sauce. A crowd-pleaser for those who love bold, Asian-inspired flavours, it’s perfect for a quick yet impressive dinner.

Ingredients:

  • 1 kg pipis, rinsed
  • 200 g noodles (your choice)
  • 2 tbsp XO sauce
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp ginger, finely chopped
  • 2 shallots, finely sliced
  • 1 tbsp rice wine
  • Fresh coriander, for garnish
  • 1 tbsp vegetable oil

Instructions:

  1. Prepare the pipis

    Rinse the pipis in cold water. In a large pan, heat oil and fry chopped garlic, ginger, and shallots until fragrant. Add XO sauce, soy sauce, and a splash of rice wine, stirring for 2 minutes.

  2. Cook the pipis

    Add the pipis to the pan, cover, and cook for 4-5 minutes until the shells open. Remove pipis from the pan and set aside. Reduce the sauce slightly, then toss in the cooked noodles.

  3. Combine and serve
