This simple yet flavourful dish brings together the rich taste of fresh tomatoes, aromatic herbs, and tender fish, making it a perfect meal for any occasion. Serve it with a side of steamed vegetables or crusty bread to complete the experience.

Ingredients:

  • 4 barramundi fillets
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 large tomatoes, chopped
  • 2 tbsp tomato paste
  • 1/2 cup red wine
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
