Baked Barramundi with Chunky Tomato Basil Sauce Recipe

Ingredients:
- 4 barramundi fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 large tomatoes, chopped
- 2 tbsp tomato paste
- 1/2 cup red wine
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
- Fresh basil leaves, for garnish

Preheat the oven to 200°C. In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened. Stir in the chopped tomatoes, tomato paste, red wine, basil, salt, and pepper. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
