Ingredients:
- 4 barramundi fillets (each 200 g)
- Salt and pepper
- 1 tbsp parsley, chopped
- 1 tsp thyme
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 cup tomatoes, diced
- Lemon juice
Instructions:

1 Season the Fish
Sprinkle salt and pepper on both sides of 4 barramundi fillets.

2 Prepare the Tomato Herb Mixture
In a bowl, combine 1 tbsp of chopped parsley, 1 tsp of thyme, 2 minced garlic cloves, 2 tbsp of olive oil, and 1 cup of diced tomatoes.
