Ingredients:

  • 600g cod fillets, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 2 bay leaves
  • 4 cups fish stock
  • 2 potatoes, peeled and diced
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Crusty bread, for serving

    In a large pot, heat the olive oil over medium heat. Add the chopped onions, celery, and carrots, cooking until softened. Stir in the garlic and cook for another minute until fragrant. Add the canned tomatoes, including their juices, and season with salt, pepper, and bay leaves. Bring the mixture to a simmer and let it cook for 10 minutes to allow the flavours to meld together.
