Lobster Omelette with Chive Butter Sauce Recipe
This elegant lobster omelette is a luxurious twist on the classic breakfast dish, combining tender lobster meat with rich eggs and a velvety chive butter sauce. Ingredients:
- 1 whole lobster (about 500g)
- 4 large eggs
- 2 tbsp butter (for the omelette)
- 50ml thickened cream
- 3 tbsp butter (for the sauce)
- 1 tbsp fresh chives, finely chopped
- Salt and pepper, to taste

1 Prepare the lobster and sauce
Boil the lobster for 8-10 minutes until cooked through. Remove the meat from the shell and cut into bite-sized pieces. In a small saucepan, melt butter over low heat, then add cream and chives. Stir to combine and set aside.

In a separate pan, whisk eggs with salt and pepper. Heat butter in a non-stick pan and pour in the egg mixture. Cook on medium heat until the edges set, then add the lobster pieces on one side. Fold the omelette in half.
