This stunning dish features succulent toothfish bathed in a rich miso glaze that caramelises to perfection. A touch of sesame dressing adds a delightful nutty aroma, creating a captivating fusion of flavours.  Ideal for a sophisticated dinner, this dish pairs beautifully with steamed rice or a crisp vegetable salad for a truly memorable meal.

Ingredients:

  • 4 toothfish fillets
  • 1/4 cup white miso paste
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon toasted sesame seeds
  • 1 spring onion, finely chopped
  • Salt, to taste
  • Fresh parsley or extra sesame seeds, for garnish

Instructions:

  1. Prepare the Miso Glaze

    In a small bowl, mix together 1/4 cup white miso paste, 2 tablespoons rice vinegar, 2 tablespoons mirin, and 1 tablespoon soy sauce. Stir until smooth.

    Preheat your grill to medium-high. Brush the miso glaze over 4 toothfish fillets and place them on a baking tray lined with foil. Grill for 6-8 minutes, or until the fish is cooked through and the glaze is caramelised.

    In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon rice vinegar, and 1 teaspoon honey. Stir in 1 tablespoon toasted sesame seeds and 1 finely chopped spring onion.
