Seared Ocean Trout with Herb Crust Recipe


This Seared Ocean Trout is a flavour bomb, with the fish cooked to juicy perfection and then crusted with a symphony of crunchy herbs. It's a dish that turns everyday ingredients into something truly special, making it a winner for a fancy dinner or a fuss-free weeknight feed.


  • 4 Ocean trout fillets (150g each)
  • Fresh parsley, basil, and coriander, chopped
  • 2 Garlic cloves, minced
  • 30 ml Olive oil
  • Salt and black pepper to taste
  • Lime for garnish


  1. Prepare the Trout

    Season 4 ocean trout fillets (150g each) with salt and freshly ground black pepper.

    Combine finely chopped parsley, basil, and coriander with minced garlic and a drizzle of olive oil to form a paste.

    Gently press the herb mixture onto the skin side of each trout fillet.
