Ingredients:
- 4 barramundi fillets (about 200g each)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 400g canned diced tomatoes
- 1/4 cup sliced black olives
- Fresh parsley, chopped (for garnish)

1 Prepare the Fish
Season barramundi fillets with salt and pepper. Heat olive oil in a skillet and pan-fry the fillets for about 3-4 minutes on each side until golden and cooked through.
