Pesto-Roasted Salmon with Honey-Glazed Beets Recipe
This vibrant dish combines the earthy sweetness of roasted beets with the herbaceous flavours of pesto-roasted salmon. Ingredients:
- 4 salmon fillets (150 g each)
- 2 tbsp pesto (store-bought or homemade)
- 500 g fresh beets, peeled and cut into wedges
- 2 tbsp olive oil
- 1 tbsp honey
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges, to serve

1 Prepare the Beets and Salmon
Preheat the oven to 200°C (fan-forced). Toss beet wedges with olive oil, salt, and pepper, then arrange on a lined baking tray. Roast for 25 minutes or until tender. Meanwhile, spread a generous layer of pesto over the salmon fillets and set aside.

2 Roast the Salmon
Remove the beets from the oven and drizzle them with honey. Push the beets to one side of the tray and place the pesto-coated salmon fillets on the other. Return the tray to the oven and roast for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.

3 Assemble and Serve
Arrange the roasted beets and salmon fillets on serving plates. Garnish with a sprinkle of chopped fresh parsley and lemon wedges for a zesty finish.
