Grilled Salmon Sandwiches with Lemon-Dill Aioli Recipe
These grilled salmon sandwiches with lemon-dill aioli are a fresh and satisfying twist on a classic favourite. Perfectly grilled salmon fillets are layered with crisp lettuce, ripe tomatoes, and a tangy lemon-dill aioli on toasted brioche buns. This recipe is ideal for a casual lunch or an elevated barbecue meal.
Ingredients:
- 4 salmon fillets (120 g each)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 4 brioche buns
- 4 lettuce leaves
- 2 ripe tomatoes, sliced
- ½ cup mayonnaise
- Juice of ½ lemon
- 1 tsp grated lemon zest
- 1 garlic clove, minced
- 2 tbsp fresh dill, chopped

1 Prepare the Ingredients
Season the salmon fillets with olive oil, smoked paprika, salt, and pepper. In a small bowl, whisk together mayonnaise, lemon juice, grated lemon zest, minced garlic, and fresh dill to make the lemon-dill aioli. Refrigerate until needed.

2 Grill the Salmon and Buns
Preheat the barbecue or grill pan to medium-high heat. Lightly oil the grates and grill the salmon skin-side down for 4–5 minutes per side, or until cooked through. Toast the brioche buns on the grill until lightly golden.

Spread lemon-dill aioli on both sides of the toasted buns. Layer with lettuce, grilled salmon fillets, and tomato slices. Top with the other half of the bun and serve immediately.
