This John Dory Minestrone is a heartwarming and nourishing soup that combines the delicate flavours of John Dory fish with a medley of fresh vegetables and herbs. Perfect for a light dinner or a wholesome lunch, this minestrone is both satisfying and packed with nutrients.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 400g canned tomatoes, chopped
  • 1 zucchini, diced
  • 100g green beans, trimmed and chopped
  • 2 potatoes, peeled and diced
  • 4 cups vegetable stock
  • 4 John Dory fillets
  • 400g canned cannellini beans, drained and rinsed
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Crusty bread, for serving
