John Dory sashimi features translucent, pale-white slices of fish that are artfully arranged to highlight their natural elegance. The flavor is mild and slightly sweet, with a buttery mouthfeel that melts delicately on the palate. Because of its understated taste, it is often paired with light condiments such as sea salt, citrus (like yuzu or sudachi), or a touch of wasabi and soy sauce to enhance its natural character without overwhelming it.
John Dory is a mild and sweet flavoured fish with a firm texture due to its low fat content. It has a buttery, melt-in-your-mouth feel.

Really delicious, melt on your mouth. Worth every cent as a special treat!
This was a terrific surprise. Rather than consume it as Sashimi, I seasoned it for a couple of hours with Garlic and Ginger, cooked it gently in a fry pan and then added it to a Rissotto dish I was making for dinner. It turned out amazing.
