This dish combines tender mussels with al dente pasta in a rich garlic and white wine sauce, bringing out the natural sweetness of the mussels. Fresh herbs add a burst of flavour, creating a comforting and elegant meal perfect for any occasion.

Ingredients:

  • 500g mussels, cleaned
  • 300g linguine or spaghetti
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 shallot, finely chopped
  • 1 red chilli, finely sliced
  • 1 cup dry white wine
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions:

    Clean and scrub the mussels under cold water, discarding any that are open or cracked. Set aside.

Pour in the white wine, and add the mussels, cooking covered for 5-7 minutes or until the mussels open. Discard any mussels that remain closed.
