Christmas Barbecued Salmon with Honey-Herb Glaze Recipe
This barbecued salmon is the perfect centrepiece for a warm Australian Christmas. Featuring a delicious honey-herb glaze with hints of garlic and lemon, it pairs beautifully with fresh summer sides. Simple yet stunning, this recipe ensures you can spend less time cooking and more time celebrating.
Ingredients:
- 1 side of salmon (about 1.2 kg), skin on
- 2 tbsp olive oil
- 3 tbsp honey
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tbsp fresh thyme leaves
- 2 tbsp fresh parsley, chopped
- Salt and cracked black pepper, to taste
- Lemon slices
- Pomegranate seeds
- Extra parsley or thyme sprigs
Instructions:

1 Prepare the salmon and glaze
In a small bowl, mix olive oil, honey, garlic, lemon zest, lemon juice, thyme, and parsley. Season with salt and cracked black pepper.

2 Barbecue the salmon
Preheat the barbecue to medium-high heat. Place the salmon fillet skin-side down on a lightly oiled grill or a large piece of baking paper. Brush generously with the honey-herb glaze. Cover the barbecue lid and cook for 10-15 minutes, brushing with more glaze halfway through, until the salmon is cooked through and slightly caramelised.

Carefully transfer the salmon to a serving platter. Garnish with fresh herbs, lemon slices, and pomegranate seeds for a festive touch. Serve warm or at room temperature with your favourite sides, such as a fresh garden salad or roasted potatoes.
